I am not a fan of rich butter cream frosting on my cakes and I always prefer to have a simple plain cake with my cup of tea. These eggless cupcakes are really easy to make and not too rich and sweet. They make the perfect guilt free teatime treat.
Simple easy and simply decadent eggless strawberry cupcakes that make any teatime special.
Ingredients:
Dry Ingredients:
1.75 cups plain flour
3/4 cup sugar
1/4 cup Nesquick strawberry flavour milkshake powder
1/2 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon bicarbonate of soda
6 strawberries hulled and diced.
Wet Ingredients:
1/3 cup sunflower oil
1 tablespoon apple cider vinegar
1 cup water
1 teaspoon vanilla essence
Method:
1. Preheat the oven to 180 degrees C/ 375 degrees F
2. In a bowl add the sugar and Nesquick powder and mix together.
3. In the same bowl sieve together the flour, salt, baking powder and bicarbonate powder.
4. Fold the flour and sugar together.
5. In a jug add the water, oil, apple cider vinegar and the vanilla essence and whisk together.
6. Fold the wet ingredients into the dry gently.Fold in the chopped strawberries.
7. Spoon the mixture into cup cake liners and bake the cakes for 15-18 minutes until golden brown. You can check if the cakes are cooked by inserting a skewer into the centre of the cake , if it comes out clean cakes are baked.
8. Remove cakes from oven and transfer them to a wire cooling rack.
NB-This recipe is using American size cups later I will update it with grams and oz.

DeleteI never would have thought of Nesquick in a baking recipe. This is interesting, along with the apple cider vinegar, due to the lack of frosting. As I am on Weight Watchers I appreciate these kind of recipes. Alana from the UBC.

ReplyDeleteprobably not my thing with an allergy to strawberries and a deep aversion to nesquick! But, they look very cute and were it not for the strawberry allergy I might try to find a way to make them without the nesquick...
ReplyDeleteFiona, you can leave out the Nesquick and substitute it the same amount of sugar .Also omit the strawberries and replace it with peaches or some other soft fruit or leave the fruit out all together.

ReplyDeleteGosh I didn't even know Nesquik milkshake was around any more - a relic from my childhood ;-) Some of the lightest cakes I've made have been eggless ones - not sure why I don't make them more often.

ReplyDeleteI've never made eggless cupcakes before (as I've never needed to...) but these sound interesting. I try to only bake with whole wheat flour and minimal sugar, so I'm not sure these would work out for me, but definitely something to bookmark should I ever need to make eggless ones for something.

Whilst I love buttercream, cupcake always seem far too naughty to choose for tea. These are perfect as, I love the idea of the addition of nesquick. GG

ReplyDeleteThese look fantastic - can't imagine making cakes without eggs in though. I personally don't like strawberry flavouring, so these wouldn't suit me, but would be interested to try another flavour which can be made without egg.
