Fresh tomato sauce tangy, sweet and sour with a spicy kick.
Ingredients:
8 ripe medium tomatoes
1 teaspoon olive oil
1/4 teaspoon chilli powder or chilli flakes
1/4 teaspoon black pepper
1/2 teaspoon salt
1 teaspoon jaggery or brown sugar
1 teaspoon lemon juice or white wine vinegar
Method:
1.Wash the tomatoes and chop them up finely.
2. Add oil in a pan and heat it on medium heat. When oil is hot add the chopped tomatoes and simmer them on low/medium heat for 10 minutes until the tomatoes breakup and form a pulp.
3. After 10 minutes add the salt,chilli powder, jaggery and lemon juice and simmer for another 5 minutes.
4. Once the tomatoes have absorbed the spices they should be thick and pulpy. Turn off the heat and leave to cool.
5. Transfer to a sterilised jar and keep in the fridge.
NB -I left the seeds in my sauce but if you prefer remove the seeds from the tomatoes before chopping them by cutting them in half and scooping the seeds out first with a spoon.

ReplyDelete10 bottle OMG thats a lot of sauce.You can buy a crate of tomatoes from the market , recipe works with over ripened ones also ,so often market traders sell off whole crate for peanuts at the end of trading when they won't keep for long.

DeleteI always make my own pasta sauce but never made tomato sauce... my toddler loves tommy K with everything so i may make a batch of this sauce minus the chilli and give him that instead, a lot healthier - thank you for a great recipe :)
ReplyDeleteYou can easily leave out the chillies totally or add a pinch of paprika instead as its not spicy.

DeleteThe only time I made tomato sauce of any kind I left the seeds in an ended up with a green mess. Perhaps I should try again with your recipe (I'm sure my little girl would love to help me).
ReplyDeleteTo my knowledge this would maybe happen if you blend the seeds in tomato in a blender, this sauce was not blended but was cooked until went pulpy so was not totally smooth but It has some texture in it.If you want a smooth sauce remove seeds from tomato before chopping into small pieces.

ReplyDeleteIf I make pasta sauce I add basil and garlic and onions too but this one is re use as a dip and hence no other ingredients used.

I always make my own tomato sauce - but often from tinned tomatoes in winter - but never heard of jaggery. What is it?
ReplyDeleteJaggery is made of the products of sugarcane and the date palm tree. it is a traditional uncentrifuged sugar consumed in asia and africa.
