Asian Sweet Corn Soup

Asian Sweet Corn Soup


Spicy and delicious Indo Chinese flavours all blended into this wonderful warming soup.

Ingredients:
  • 240 g Frozen sweet corn kernels
  • 1 white medium onion finely chopped
  • 1 clove garlic peeled and finely chopped
  • 1 tablespoon light olive oil
  • 2 cups skimmed milk.
  • 1 medium potato peeled and diced
  • 1 tablespoon toasted white sesame seeds
  • 1/2 teaspoon salt
  • 1/2 teaspoon white pepper
  • 1 green chilli de seeded and chopped
  • 1 tablespoon light soya sauce

Method:

1.In a frying pan heat the oil and sauté the onions and garlic for 2-3 minutes until onion is translucent.2.Add the diced potato and cook for another 5 minutes.3.Add the sweetcorn to the potatoes and sauté for 2-3 minutes longer.4.Transfer the sweetcorn and potato mixture to the Morphy Mixture soup maker and add the salt, pepper, chilli and milk and cook for 21 minutes on smooth setting.5.Once soup is cooked open the top and add the soya sauce and give it a stir.6.Transfer the soup to serving bowls and sprinkle with the toasted sesame seeds.

This soup can be made on stove top also, add the milk and spices to the pan at step 4 and continue cooking soup until potatoes are tender.Blend the soup in a blender and then add the soya sauce.


I have cooked my soup in the Morphy Richards 501012 Soup maker that was sent to me to try.The recipe post is in collaboration with Legal and General who are promoting healthy eating. My inspiration was to create a healthy soup that that would be perfect to serve after all the indulgence of rich Christmas food. This soup is perfect as a starter to any Chinese meal, for lunch or just as an appetiser in shot glasses to serve at parties.The recipe is also suitable for the 5:2 diet.

Snow Man Shaped Tree Decorations


Having made Christmas Pudding and Stocking shaped decorations, I am now going to show you how to make snowman shaped tree decorations.

This activity requires adult supervision since we are using a glue gun.For young children you can use fabric glue.

You will need:

1 piece blue felt
1 piece white felt
Some silver beads / balls
Round cookie cutter
Black, orange and red felt for eyes nose and mouth
5 mm wide ribbon
Glue gun
Scissors.



How to make:

1. Place the round cutter on the white felt and draw around it .
2. Cut out 2 white circle shapes
3. Draw a cone shape from the blue felt to look like a bobble hat and cut it out.
4. From the white felt, cut out a small white circle for the hat bobble and a strip to fit the bottom of the blue cone shape.
4. Cut out two black eyes, a  orange nose and a red mouth.
5. Cut a 12 cm piece of ribbon and fold it in half.


6. Place a white circle  shape on a flat surface and glue the folded ribbon to it in the top centre to create a hanging loop.
6. Add more glue to the circle and sandwich the second white circle  on top.
7. At the top edge of the circle glue on the blue cone shape, and then glue the white trim to the bottom of the cone shape and the white bobble on the cone point. Glue a line of silver beads on the white trim on the hat.
8.Glue on the eyes, nose and mouth.
Once dry decorations are ready to hang on the tree.

Stocking shaped Christmas tree Decoration


I have already shared how to make Christmas Pudding shaped Tree shaped decorations in my previous post, today we will learn how to make a Christmas stocking shaped tree decoration.

This activity requires adult supervision since we are using a glue gun.For young children you can use fabric glue.

You will need:

1 piece red felt
1 piece white felt
A sparkly button or decoration
Stocking shaped cookie cutter or template
5 mm wide ribbon
Glue gun
Scissors.


How to make:

1. Place the stocking shaped cutters on the red felt and draw around it .
2. Cut out 2 red stocking shapes
3. Place the stocking shaped cutter on the white felt and draw around it .
4. Cut out 1 white stocking shape. On  this shape you can draw with pen a toe area, insole area and a wiggly cuff at the top. Cut these shapes out and discard rest.


5.Place a red stocking shape on a flat surface and glue to it in the top left hand corner the folded ribbon to create a hanging loop.
6. Add more glue to the stocking and sandwich the second red stocking on top.
7. Glue on the cuff, sole and toe area on the stocking.
8. Add a button or sparkly decoration on the cuff in the centre.


Once dry decorations are ready to hang on the tree.

Christmas Pudding shape Felt Tree Decorations


With the Christmas school holidays upon us it nice to find activities that will keep the younger ones entertained and at the same time create things that are home made and can be used in the home or gifted. These lovely Christmas tree decorations are easy to make and make lovely tree decorations or even gift tags for presents.

This activity requires adult supervision since we are using a glue gun.For young children you can use fabric glue.

You will need:

1 piece brown felt
1 piece white felt
1 piece green felt
1 piece red felt
5 mm wide ribbon
Glue gun
Scissors.
1 heart cookie cutter to draw around
1 round cookie cutter to draw around.








How to make:

1. Place the cookie cutters on the brown felt and draw around it .
2. Cut out 2 heart shapes and 2 round circles.
3. Place both the cookie cutters on the white felt and draw around them.
4. Cut out 1 white circle and 1 heart shape.
5. One third of the way down both the shapes draw a wiggly line to look like icing running down. Cut the shapes out and discard the bottom pieces.
6. On green felt draw 4 small holly shapes and cut them out
7. Cut out 6 small red dots from the red felt for the holly berries
8. Cut the ribbon pieces, each 12 cm long  and fold each piece in half.

9. Place one of the brown hearts on to a flat surface and place the folded ribbon in the centre to create a hanging loop. Glue the end down.
10. Apply glue all around the heart and sandwich the second brown heart on top of the first heart.
11. Stick the white icing shape to the top of the brown heart.


12. Position and stick the holly and berries to the top of the heart.
13. Repeat exactly the same method to create the round Christmas pudding decoration.
Once dry decorations are ready to hang on the tree.

Spicy Aubergine Tortilla Wraps

Spicy Aubergine wraps

Aubergines cooked in aromatic spices and wrapped in a soft tortilla wrap...

Ingredients:
  • 1 large Aubergine
  • 1 Medium Onion
  • 1/2 teaspoon Turmeric powder
  • 1/2 teaspoon Coriander powder
  • 1/2 teaspoon Cumin powder
  • 1/2 teaspoon Fresh Ginger paste
  • 1/2 teaspoon Fresh chilli paste
  • 1 tablespoon Lemon Juice
  • 1/2 teaspoon Chilli powder
  • 2 tablespoons Olive Oil
  • 1 teaspoon Salt
  • 1 tablespoon fresh Coriander
  • 1 bowl mixed salad , shredded lettuce, tomato slices , grated carrots
  • 4 Mission deli  original tortilla wraps
Method:

1. Dice the aubergines in 1 cm cubes.2. Peel the onion and finely dice it.3. Add 2 tablespoons oil to a frying pan and saute the onion on medium heat until it's translucent.4.Add the aubergine to the onions, followed by the salt, green chilli paste, ginger paste, red chilli powder and lemon juice, turmeric powder, cumin powder and coriander powder.5.Saute the mixture for 7-8 minutes until aubergine is cooked .6.Turn off the heat and allow the aubergines to cool slightly .7. Once the mixture cooled stir in a tablespoon of fresh coriander .8. To serve, warm the tortilla wraps on a griddle.9. Place the warmed wrap on a plate and spoon a generous amount of spiced aubergines.10. Top the aubergines with shredded lettuce, tomato slices and grated carrots.11. Roll up the tortilla wrap and serve with a with a cool minty yoghurt  dip.

Bulb baubles christmas tree decorations


Decorating the christmas tree is a lovely tradition that involves all the family members from young to old. There is nothing better than having an evening of drinks mulled wine and mince pies whilst everyone helps to untangle , tangle and help to put up the tree and hang decorations. There is also the tradition that the youngest member gets to choose and put the fairy or the star on the tree.

Before we decorate our tree each year, we love creating some new home made decorations for the tree. We have made salt dough decorations, felt decorations, cookies and candy decorations too. This year we thought we try something new. We got the idea from light bulbs direct who are holding a competition for decorated old light bulbs. This is my entry to the ‘Light Bulbles’ Competition over at Lightbulbs-Direct.com  

We covered our old bulbs with satin ribbon and sequined ribbon and added sparkly sequins to make them royal and grand. You too can make your Bulb decorations by following the instructions below:





You will need:
Makes 2

2 Light bulbs
1 roll (5 metres) Satin ribbon 2cm wide colours of your choice
5 metres of gold bead garland
1 metre Sequined ribbon for creating the loop for hanging the bulb bauble
Gold sequins and gold  beads
Glue gun



Instructions:

1. Cut 8 pieces of ribbon approx 20 cm pieces long each for each bulb decoration.The ribbon length should fit from top to bottom of bulb on each side.
2. Glue the first piece of ribbon starting at the thin part of the bulb and and glueing until it reaches the opposite side of the bulb.
3. Continue sticking each piece of ribbon around the bulb making sure all seams are over lapped. Don't worry about being too neat, the bumps and creases will give textured pleating effect to your surface.



4. Cut a 12 cm long piece of sequined ribbon and stick it to the narrow part of the bulb on either side to create a loop for hanging the bulb.
5. Starting at the narrow part of the bulb start sticking the gold bead garland around the bulb neck for about 2cm. Secure the cut end with glue
6. Stick sequins on the wider part of the bulb body and leave the bulb decoration to dry for 30 minutes.
The bulb baubles are ready for gifting or hanging on the tree.

Orange Marmalade Cake

Orange Marmalade Cake

Orange marmalade cake with aromatic citrus araoma.

Ingredients:

  • 175 g /6 oz softened butter, plus extra for greasing pan
  • 175g / 6oz caster sugar
  • 200g / 7 oz self raising flour
  • 50 g / 1.5 oz ground almonds
  • 1 teaspoon orange zest
  • 3 medium eggs 
  • 3 tablespoons orange marmalade plus 1 tablespoon marmalade for brushing on cake
  • 1 teaspoon vanilla

    Method:

    1.Pre heat oven to 170 degrees and grease a loaf tin with the butter and dust it with flour.2.Cream together the sugar and butter, add the eggs and flour and almonds and mix together.3. Add the orange zest, marmalade and vanilla and mix together into the cake batter .4. Pour the batter into the prepared loaf tin and bake for 45 minutes in the oven. Check the cake is cooked by inserting a skewer in the cake, if it comes out clean cake is ready.5. Remove the cake from the oven and brush it with the reserved marmalade while its hot.

    I was sent some bottles of the Christmas marmalade with cranberries and the Christmas preserve  mulled wine  by Mackays. Adding the marmalade in the cake gave it a wonderful citrus flavour to the cake.
