Lychee and Berry Cooler



Summer time is perfect to dine outdoors, I adore the smell of the barbecue in the summer heat, the sound of the crackling coals as they burn and the breeze from the trees makes it an idyllic evening. I relish sitting in the garden in the evenings with a cooling mocktail just enjoying the evening as the sun goes down.

I particularly like tropical flavours in my mocktails and pairing them with seasonal berries is a trick I learnt many years ago. The Sweetness from the lychee and the tang from the blueberries makes Lychee and Berry Cooler a really refreshing mocktail.

Lychee Berry Cooler
A refreshing summer mocktail with tropical flavours and berry burst.
Ingredients:
  • 150ml Lychee Juice
  • 150ml Soda water
  • 10 Mint Leaves
  • 1 cupful Ice
  • 60g Sugar
  • 1 Lime cut into slices
  • 200g Blueberries
  • 60 ml Water

Method:
1. In a saucepan add 150 g of blueberries (reserve rest for garnish) together with water and sugar and simmer the mixture until the sugar is melted and the berries soften. Mash the berries with the back of the spoon. Remove the pan from the heat and strain the mixture to make blueberry syrup.Keep aside to use as needed.2.Take two tall glasses Add three tablespoons of Blueberry syrup to each glass and half fill the glasses with ice cubes.3.Add slices of lime, few blueberries and a couple of mint leaves into the glasses. Pour over the ice about 50 ml of Lychee Juice and 50 ml of soda water. 4. Garnish with blueberries and mint leaves and serve immediately.

Strawberry Almond Milkshake

Strawberry Almond Milkshake
Delicious and creamy strawberry and almond milk blended together with ice to make a frothy milkshake.
Ingredients:
  • 12 Strawberries
  • 200 ml Almond Milk chilled
  • 4-6 teaspoons Stevia sugar
  • 1/2 teaspoon Vanilla essence
  • 1/2 cup Ice cubes
Method:
1. Hull the strawberries and chop them up in bite size pieces.2. Add the ice to the Optimum 9400 blender or any blender that crushes ice and blend for 30 seconds.3. Add the strawberries, almond milk, vanilla and the stevia sugar (you will need 4-6 teaspoons as it's not very sweet) . Blend all the ingredients for another minute.3. Pour the Strawberry almond milkshake into two tall chilled glasses and serve immediately.

This milkshake is vegan and very healthy, if you prefer your milkshake thick you can add a ripe banana to thicken it.

Peach Lemonade




Juicy Peaches and Nectarines are one of my favorite fruits in the summer. Nothing beats biting into a juicy peach and letting all the juices run down your chin as you savour the sweet nectar.Some of my favorite recipes with peaches are upside down peach cake, peach sorbet, peach bellinis  and even peach and mint salad. But one recipe that is most popular in our household is peach lemonade. Not only is it refreshing but it is high in vitamin C with no added sugar.

Peach Lemonade
Refreshing and fragrant peach lemonade with a citrus kick.
Ingredients:
  • 4 Peaches
  • 2 Lemons
  • 100 ml sparkling water
  • 1 tablespoon stevia sugar
  • 1 cup icecubes
  • 10 mint leaves
Method:
1. Wash the peaches, cut them in half and stone them.2. Cut one of the peaches into slices and reserve it for garnish. 3. Peel the  lemons and remove the skin and pith.4.Add all the peach halves and whole peeled lemon into the Optimum 600 and extract the juice, once all the fruit has been juiced add some stevia sugar to sweeten it. 5. Strain the juice into a jug and add the sparkling water, ice cubes, peaches slices and mint leaves 6. Stir and serve in tall.

Kale, Kiwi and Orange Juice.

Kale, Kiwi and Orange Juice
Vitamin packed power juice made with kale, kiwi and oranges
Ingredients:
  • 4 Oranges
  • Handful Kale
  • 4 Kiwi
  • 1 cup Icecubes
Method:
1. Peel the oranges and keep aside.2. Peel the kiwi and keep aside3. Slightly massage the kale in your hands and then add it to the Optimum 600 juicer.4. Add the oranges and kiwi to the juicer.5. Pour the juice into two tall glasses and serve with ice cubes.

Plum, Beetroot and Apple Juice

Plum, Beetroot and Apple Juice


A clensing and healthy juice to kickstart your day.

Ingredients:
  • 10 ripe plums
  • 1 gala apple
  • 1 small beetroot
  • 1 cup ice cubes
  • 1 tablespoon agave nectar(optional)
Method:

1.Wash the plums and cut them in half and remove the stones.Put the plums in a bowl.2.Core the apple and keeping the skin on, cut the apple into chunks and put in the the bowl .3.Peel the beetroot and cut it into chunks and add it to the bowl.4.Add all the fruit into the Optimum 600 juicer and extract the juice, Once all the fruit has been juiced, taste it and if required add some agave necter to sweeten it. 5.Add the icecubes to two tall glasses and pour the juice into the glasses, serve immediately.

Almond Masala milk


Masala Milk is a very popular milk drink served at weddings and special occasions all over India.It is a milk drink made from full fat dairy milk which is boiled and reduced and than  enchriched with spices nuts and saffron. It can be served hot or cold. I have given this traditional drink a twist by making it with almond milk.

Almond Masala milk


Beautiful araomatic Indian spices fused in sweet almond milk with royal nuts and saffron

Ingredients:
  • 1 cup raw almonds
  • 3 cups water
  • 2 tablespoons sugar
  • 10 raw almonds
  • 10 raw cashew nuts
  • 10 raw pistachio nuts
  • 1 teaspoon cardamon powder
  • few strands saffron

Method:

1.Soak the almonds in 1 cup water for 2 hours 2.Add the soaked almonds and two cups of water to the Optimum 9400 and blend the almonds until you get smooth almond milk.3.Line a large jug with a muslin cloth and pour the almond milk into it to strain the milk. Squeeze out the milk and discard the almond residue.4.Pour the almond milk into a bottle and keep it in the fridge and use as required 5.Coarsely grind the nuts in the Optimum 9400 and keep them aside 6.Pour the almond milk into pan and heat it up to slow simmer 7.Add a few strands of saffron, the ground nuts, cardamom powder and the sugar and mix together 8.Pour the hot almond masala milk into serving glasses and serve hot

Oranger, Ginger and Lemon Grass Fruit Tea


Soothing, warm, citrussy, ginger spiced fruit tea

Ingredients:
  • 2 oranges
  • 100 ml water
  • 1 tablespoon honey
  • 1 inch piece lemon grass cut into small pieces
  • 1 inch piece fresh ginger grated
  • 4 orange slices for garnish

Method:

1. Peel the oranges and put them through the Optimum 600 slow juicer 2. Extract the orange juice and add it to a glass jug. Add 100ml boiling water to the orange juice and add the ginger and lemon grass. Leave to infuse for 5 minutes.3.After 5 minutes stir in the honey and strain the fruit tea into serving mugs.Garnish with orange slices and sip warm.

Blueberry and apple smoothie


Refreshing breakfast smoothie with antioxidants and healing power of ginger.

Ingredients:

200 g fresh blueberries
I apple
1 tablespoon goji berries
1 large cup of ice cubes ( approx 20)
1 cm piece of fresh ginger peeled
1 tablespoon honey

Method:

1. Wash the blue berries, reserve a few for garnish and add the remaining to the Optimum 9400 blender.
2. Core the apple and cut it into chunks and place it in the blender.
3. Add the cube of ginger and goji berries together with the ice and honey. Blend to a smooth purée.
4. Transfer to serving glasses and garnish with few blueberries before serving
