Spicy Roasted Chick Peas

Spicy Roasted Chick Peas
A delicious and moreish snack that's healthy too.
Ingredients:
  • 2 cans White precooked chickpeas
  • 1/2 teaspoon Chilli powder
  • 1 tablespoon Olive Oil
  • 3/4 teaspoon Salt
  • Pinch garlic salt
Method:
1. Preheat the oven to 200 degrees C2. Drain the chickpeas from the can and pat them dry with a tea towel.3. Transfer the chick peas to a large bowl, add the olive oil, salt, garlic salt and chilli powder and toss together so that the chick peas are coated in the spices.4.Line a baking tray with parchment paper and transfer the chickpeas on to the baking tray, spreading them out in an even layer.4. Place the tray in the oven to bake for 15 minutes, after which stir the chick peas around and bake them for a further 15 minutes.5. Turn the off the oven and leave the tray in there to cool. 6. Once cooled, transfer the chickpeas to an air tight container to store them. 

The canned white chickpeas can be purchased in any Asian grocery store or any large supermarket in the Special foods aisle.
For variation  in flavours you can add sumac, oregano, black pepper or Mexican spice.

Flaked Rice Pudding -Kheer


Rice pudding is a very popular Indian dessert that is served at religiousfestivals and as prasad- a  sweet offering to the dieties. It can be made from short grain rice or flaked rice. In todays post I have made my Kheer using flaked rice and adding traditional Indian spices such as saffron, cardamom and nutmeg.

Flaked Rice Pudding -Kheer


Creamy rich flaked rice pudding cooked with fragrant Indian spices and nuts.

Ingredients:
  • 1.5 cups full cream milk
  • 1/2 cup thin flaked rice
  • 1/4 cup sweetened condensed milk
  • 5 almonds
  • 5 cashew nuts
  • 5 pistachio nuts
  • 1 teaspoon cardamon powder
  • 1/2 teaspoon nutmeg powder
  • few strands saffron

Method:

1.In a heavy bottomed pan, pour the milk and bring it to a slow simmer. 2.Put the flaked rice in a large sieve and rinse them under cold water.3.Add the rinsed flaked rice to the milk and simmer the milk until the flaked rice is soft, it will takeabout 8 minutes.4. Add the condensed milk to the pan and simmer for 2-3 minutes longer .5.Slice the the nuts  and keep them aside.6. Add a few strands of saffron, half the nuts, cardamom powder, nutmeg  into the rice pudding and stir together 8.Take the rice pudding off the heat and transfer to a serving bowl , garnish with remaining nuts.
