Just last week a friend of mine who has gone Gluten free said she used dates as one of three ingredients to make cookies. She said they were delicious, although I cannot confirm that as she did not bring cookies to share. Her family ate them all, which does make it sound like they were delicious. So, this makes perfect sense to me. I'm going to have to try it.
